Curry Seasoning (MADRAS CURRY POWDER)

Makes About 1 1/3 cups

 

Ingredients

  • 6 tablespoons coriander seeds 
  • 1/4 cup cumin seeds 
  • 3 tablespoons chana dal(yellow split peas) 
  • 1 tablespoon black peppercorns 
  • 1 tablespoon black mustard seeds 
  • 5 dried red Chile peppers 
  • (10 fresh or dried curry leaves) 
  • Combine with: 
  • 2 tablespoons fenugreek seeds 
  • 3 tablespoons turmeric 

 

Directions

  1. Combine in a dry skillet (coriander,cumin, chana dal,  peppercorns,mustard , Chile , curry leaves)  ) and toast over medium heat until fragrant and a shade darker, about 4 minutes: 
  2. Add In fenugreek 
  3. Grind to a powder in batches in a spice mill or coffee grinder 
  4. Add in turmeric 
  5. Store in an airtight container in a cool place.
