  Whole Orange Cake 
    
 Every good cook needs a nice moist, dense cake in her repertoire.  This one is loaded with orange flavor and tender flakes of peel….not too sweet…it’s just right.
  
 
  Cooking oil spray ( I use Crisco from the can)
  1 Cup Butter, softened
  1 ¼ cups granulated sugar
  3 large eggs
  2 to 3 oranges. ( ends trimmed off. Then cu5t into chunks and seed.
  2 ½ cups flour
  ¼ tsp. salt and baking soda
  ½ tsp baking powder  
  
 Instructions
 
  Preheat oven to 325
  Coat a 10 cup bunt pan with oil spray or Crisco
  In a large bowl with mixer on medium speed beat butter and sugar until fluffy. Then beat in eggs.   
  Whirl orange chunks in food processor until mostly smooth but not pureed. Add 1 ½ cups orange mixture to batter
  And blend well. Add flour, salt, baking soda and baking powder to bowl and beat until smooth.   
  Spread batter in prepared bunt pan.   
  Bake until a toothpick comes out with only a few crumbs clinging to it, about 50 to 55 minutes.
  Cool pan on rack 10 minutes, then invert on to the rack and cool completely.  
  
 Frosting:
 
  1 ½ cups powdered sugar
  2 Tbl.  Plus one tsp of orange juice  
  
 Instructions
 
  Mix sugar and orange juice together and drizzle over the cooled cake.  
  Let glaze set and then slice.
