Sauce
 (cook down until the correct texture) about 4 hour

Fast way:
1-4lb jar or Prego Sauce (no meat) I used “Heart Smart traditional” – there is less salt 

1 or 2 28 oz can San Marzano whole peeled tomatoes
from Italian deli 6 links Italian sausage – mild or sweet browned like you would hamburger – crumbled
1 ½ Tbl Fennel
Cheese Mix 3 pounds Goat Ricotta – from Italian deli
1 1/2 pound cottage cheese
1/2 pound grated Parmigiano-Reggiano cheese
3 or 4 eggs
2 Tbl Parsley
2 Tbl Oregano
2 Tbl Thyme
 ¾  Tbl Garlic powder
Pepper if you like
 3 sliced sticks Good pepperoni – you know the kind (not for pizza) – from Italian deli
I usually put this on the cheese layer
 Topping 3 cups grated Mozzarella
 Lasagna Noodles
